This refreshingly authentic and eccentric hotel lies in an extraordinary village surrounded by breath-taking countryside. Chettle is an estate village, largely owned by one family since the 19th century, so it has been protected from development and has a rare sense of community. The hotel, a former dower house, has a sense of grandeur thanks to tall ceilings, some fine Regency plasterwork, and portraits of distinguished ancestors. However, the atmosphere is relaxed and friendly, and with just eight rooms guests receive very personal service. Mercifully, The Castleman has been spared the typical boutique-hotel makeover that has stripped the character from so many country house hotels. The result is something far more true to itself and its history, something really rather special.

The Castleman genuinely cares about provenance, and has focused on local and seasonal produce since it opened in 1996. The pheasant kiev stuffed with Isle of Wight black garlic butter, greens from the garden, crushed potatoes and parsley aioli is delicious.

The restaurant: British seasonal cuisine, dishes include fillet of beef with hasselback potatoes, pork tenderloin and pan-fried hake. Open Mon-Sat for dinner and Sat & Sun for lunch. Mains from £17.
